Hey yall!, it’s Tammy with Collard Valley Cooks! I am a southern girl born in raised in Collard Valley in Polk County Georgia. We went to church on Sunday, school during the week, the grocery store on Friday’s and that was our life. No vacations, no camping, just plain old southern country people NOW FOR THIS FAMILY RECIPE: Creamed Corn (Fried Corn) 6 EARS FRESH CORN 1 1/2 CUPS WATER 1 TSP. SALT 1/4 TSP. PEPPER 2 CUPS MILK 3 TBSP. BUTTER OR MARGARINE 2 TBSP. CORNSTARCH Shuck your corn. Brush it with a vegetable brush to remove silks. Cut it off cobb with very sharp knife. Start at the top and cut downward into a wide bowl while resting the cobb on the bottom of bowl. Rotate cobb while cutting. Try to cut it thin enough to do two rows. After cutting off kernels scrape the cobb. Add corn, water, salt, pepper, 1 cup of milk and butter to a large wok or skillet. Turn on high and cook until water evaporates off corn. Put cornstarch in the remaining cup of milk (whisk well) or put in jar with lid and shake well then add to corn to thicken. About 5-8 minutes. Field Corn “My family planted field corn every year to make cornmeal with. They also used it for feeding the animals. Many farmers eat field corn as well. We sure did. You cook and prepare it the same way as the corn above. Field corn is ready when the tassels are very light golden brown. It gets hard quick so there is a short window for picking. It doesn’t have any sugar in it and it is so very good with fresh fried okra and sliced garden tomatoes.”'
