'Canning \"Maw Maw\'s Sweet Pickles\" How to make Old Fashion Sweet Pickles. 100+Year old Recipe.'

'Try these sweet pickles you won\'t regret it. We had ran out a couple of months back and searched  high and low for sweet pickles in the store and the one we found were horrible. They were the little small pickles sweet but had an unidentifiable taste that was not appetizing. My Pickles are crisp sweet and just awesome . Especially in Potatoe Salad and Chicken Salad. I even like them with my peas and cornbread,  If you have any questions about this recipe or in the making of these pickles please don\'t hesitate to ask.  The Blog was deleted with out any notice... Here is the recipe below.   Recipe Sweet Pickles  7lbs of Cucumbers washed and  Sliced in 1/4 inch slices 1 Cup Lime mixed with 2 Gallons of Water (Mix 1 Gallon to 1/2 Cup Lime) 8 Cups of Vinegar 9 Cups of Sugar 1 Heaping TBSP of Pickling Spice 1 TBSP of Sea Salt 1 teaspoon of Red Pepper Flakes(Optional) 1 Gallon of Water to a half cup of Lime.. Mix well and pour over Cucumbers. Keep mixing this ratio until you have them completely covered in the lime water.  1.Use a plate with a jar of water to keep the cucumbers submerged in the Lime water.. The cucumbers need to stay in the Lime water solution for 8-12 Hours. I mix mine up the night before and let them sit all night long. The next morning drain the lime water off of the the cucumbers and rinse the cucumbers at least 3 times to remove the Lime Water Then cover the cucumbers in ICE and and add water until they are covered. The cucumbers need to stay in the Ice water bath for 3 hours. Drain the ice water off and place the Cucumbers in the Pot that you plan to cook them in.  In another pot add your 8 Cups Vinegar, 8 cups of sugar 2 TBSP of salt and put the  pot on the stove on medium heat and stir until the sugar is completely melted.You will mix up this ratio of vinegar sugar salt until you make enough to almost cover the cucumbers. Take an piece of cheese cloth or muslin(I use old T-shirts cut into large squares for spice bags)  place a Heaping TBSP of Mc Cormicks Pickling spice in the center of the t-shirt for each mixture of Vinegar sugar that you make up. Use some kitchen string to tie up the spice bag.. Double tie the spice bag.. I also add 1 TBSP of Red Pepper Flakes to the cucumbers..  You will then cook the Cucumbers until they start looking translucent around 40-45 minutes. . When they are translucent they are done.  Use only sterilized jars and heated rings and lids.. (place your clean lids and rings into a pot covered with water and bring to a boil. turn them down and keep them hot until you add them to the tops of the jars. Laddle Boiling Hot Cucumbers and Liquid into WIDE mouth jars and using a magnet add a lid and then a ring to the jar. I use BBQ Gloves or heat proof gloves for this. When u add the ring to the top of the jar tighten it down really tight.. This is important to seal the lid not he jar. Place the jars out of a draft and cover them with large thick towels or blankets and let them cool down 8-10 hours or over night before you touch them again.  Most recipes call for water bathing pickles but I do not hot water bath my pickles. But if you want to place them into a water bath canner that is up to you. Bring them to a boil totally submerged under the boiling water for 25 minutes with water boiling the entire 25 minutes . Then remove jars to cool. Always cover with thick towels or blankets until they are completely cool. Don’t touch them until they are completely cool. Able with the date and ingredients and store in a cool dark place under 80 degrees.'
